Salmon Patties

What You Will Need

Total time: 30 min

Serves:  8 patties

Ingredients:

3 (7.5 oz) cans wild caught Alaskan sockeye salmon

5 teaspoon Dijon mustard

1 cup raw oats

2 teaspoons lemon or lime juice

2 teaspoons lemon or lime zest

5 tablespoon chopped parsley

5 tablespoon fresh chives, green onions or shallots

2 eggs, beaten

1-2 tablespoons of avocado or olive oil

Directions:

1. Drain salmon cans.

2. Combine all ingredients in a large bowl.

3. To form patties and to have them the same size, you might want to use a one-third measuring cup to measure the tuna mixture. Pat the patties a little to make sure they are formed tightly. Set the patties aside on a dish.

4. Heat the oil in a large skillet over medium heat.

5. Working in batches, cook patties for about 5-7 minutes on each side until golden brown and crisp on the outside (You may need to add a tablespoon of oil to the pan between batches). Avoid overcrowding the pan when cooking the patties. They will take longer to cook and flipping them over will be more difficult. If using a 10-inch skillet, cook 4 patties at a time.
