Twice Baked and Delicious

Here’s a delicious breakfast or lunch meal that is easy to make and healthy. Take time to enjoy and nourish the body. Love yourself, especially in the way you eat.

Twice Baked Sweet Potatoes

  • 2 sweet potatoes
  • 6 oz ground chicken sausage
  • 1/4 cup mozzarella or other cheese of your choice
  • 1/4 cup green onions
  • 5 Oz bag of fresh spinach

Instructions

  • Wash sweet potatoes
  • Microwave 2 sweet potatoes for 7 minutes or roast in the oven. At 400 degrees for 40 minutes
  • While sweet potatoes cook, brown sausage in a large skillet over medium heat for 5 minutes
  • Add bag of spinach until wilted
  • Set aside
  • When sweet potatoes are done cooking, remove and let cool for 5or 10 minutes
  • Preheat or reduce oven temperature to 375 degrees
  • Carefully slice potatoes in half length wise, making sure halves can sit upright
  • Using a spoon, scoop out insides of sweet potatoes and place in the skillet with sausage and spinach, careful to leave about 1/4 inch of flesh around skin
  • Mash the potato flesh with a fork until everything is combined
  • Using a spoon, fill sweet potato with sausage mix and fill in potato skin
  • When potato skins are full, create a well in each potatoes deep enough to hold an egg
  • Crack one egg and place inside the potato well
  • Place sweet potatoes in oven and bake for 20 to 25 minutes or until egg whites are opaque
  • Remove from oven and garnish each potato skin with cheese and green onions
