What’s For Dinner? –Vegetarian Quiche

We hope you are feeling well. Staying healthy during this time takes more effort. Food should be an integral part of that plan. Here’s a delicious vegetarian recipe packed with lots of flavor, protein, and antioxidants. 

Egg White Quiche with Leeks, Spinach, Mushrooms, and Feta

Total time: 1 hr (crustless); 1 hr.20 min (with pie shell)

Prep time: 15 minutes (crustless); 25 min (with pie shell)

Bake time: 40 minutes (crustless); 55 min (with pie shell)

 

Serves: 6 -8

 Ingredients

1 9 inch baked pie shell (see recipe for pie shell)

1 cup (250 ml or about 8 egg whites) of egg whites OR 6 eggs

1/4 cup milk (any milk will work –  I used unsweetened original almond milk)

2 tablespoons salsa 

1 teaspoon Frank’s Hot Sauce (optional)

1 tablespoon each of chopped fresh oregano and thyme OR 1 tsp of dried oregano and thyme

1/4 cup smoked sundried tomatoes 

8 oz thinly sliced mushrooms

2 cups fresh spinach

1 large leek (cleaned and thinly chopped)

1/2 cup crumbled feta cheese

Directions

1.Heat oven to 350 degrees F. 

2.Whisk egg whites (or eggs), milk, salsa, hot sauce, oregano, and thyme together in a bowl. Set aside.

3.In a medium sized non-stick pan, lightly spritzed with non-stick avocado oil spray, saute the leeks,mushrooms, and spinach over medium heat until all vegetables are softened, especially the mushrooms, and all the liquid has evaporated (about 10 minutes).

4.Season with a little salt and pepper. 

5.Transfer sauteed vegetables to the cooked pie shell and top them with feta cheese.

6.Pour the egg mixture over the sauteed vegetables and cheese. 

7.Place the quiche on a foil lined baking sheet to catch any overflow. 

8.Bake for 40 minutes at 350 degrees F. 

 

*You can also make this quiche crustless and omit the pie shell.  It’s just as delicious!

 

**We served our quiche with a bowl of lentils and a side salad.

Pie Shell Recipe

Pie Shell

Total Time: Prep time: 10 minutes Bake time: 15 minutes

Serves: 6 -8 

 

Ingredients

2 ½ cups blanched almond flour

1 tablespoon coconut flour

1 large cold egg

5 teaspoon ice water

¾ teaspoon salt

3 ½ tablespoon oil (I use either coconut or avocado oil)

 

Directions

1.Preheat oven to 325℉.

2.Place all ingredients in a medium bowl and combine/mix until the dough comes together.

3.Press dough into the bottom and up the sides of a 9-inch pie plate.

4.Bake until the edges become gold, for about 15 minutes.
